  • ½ teaspoon salt
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract

Instructions

  1. Reduce apple cider in a saucepan over medium heat until thickened to about ¼ cup; let cool.
  2. Brown the butter in a saucepan over low heat until nutty; cool slightly.
  3. In a mixing bowl, whisk together flour, spices, baking powder, baking soda, cornstarch, and salt.
  4. Combine cooled browned butter with sugars, then add egg, yolk, reduced cider, and vanilla; mix well.
  5. Gradually incorporate dry ingredients into wet until just combined. Let the dough rest while preheating the oven to 375°F (190°C).
