  • 32 ounces full-fat cream cheese
  • 2 Granny Smith apples
  • 5 tablespoons unsalted butter (melted)
  • ½ cup rolled oats
  • 1 teaspoon ground cinnamon
  • 4 large eggs
  • ½ cup all purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon ground nutmeg
  • pinch salt
  • ½ cup sugar
  • ⅔ cup sour cream (room temperature)
  • 1 teaspoon vanilla extract
  • 3 tablespoons light brown sugar

Instructions

  1. Preheat oven to 325°F (163°C). Prepare the graham cracker crust by mixing crumbs, sugar, melted butter, cinnamon, nutmeg, and salt in a bowl. Press into the bottom of a springform pan.
  2. Make the oat streusel topping by combining flour, rolled oats, light brown sugar, cinnamon, and melted butter until crumbly.
  3. Toss sliced apples with light brown sugar and cinnamon in another bowl.
  4. In a mixing bowl, beat cream cheese until smooth. Gradually add sugars, then sour cream, vanilla extract, cinnamon, and eggs one at a time.
  5. Layer half of the cheesecake filling over the crust followed by half of the apple mixture. Repeat with remaining filling and apples. Top with oat streusel.
  6. Bake for about 70 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours.
