  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Gently fold in finely diced apples.
  7. Spread the batter evenly in the prepared pan.
  8. Mix together topping ingredients (sugar and cinnamon) and sprinkle over the batter.
  9. Bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
