  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 340 g cooked smoked sausage (turkey or chicken)

Instructions

  1. Preheat the oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper; roast for 15-20 minutes until tender.
  2. Prepare Brussels sprouts by tossing them with olive oil, salt, and pepper; roast on a separate baking sheet for 20-30 minutes until golden brown.
  3. Boil salted water in a large pot; cook bow tie pasta according to package directions until al dente. Reserve some pasta water before draining.
  4. In a large skillet over medium heat, heat olive oil and sauté sliced sausage until browned. Remove from skillet.
  5. In the same skillet, add minced garlic and cook until fragrant; add butter and melted pasta to combine well with seasoning.
  6. Gently mix in roasted vegetables and cooked sausage; adjust seasoning as needed before serving.
