  • 3 pounds russet or Yukon gold potatoes
  • 1 stick + 2 tbsp unsalted butter
  • 7 cloves garlic
  • 3/4 cup warm heavy cream
  • 3/4 cup sour cream
  • 1 teaspoon salt

Instructions

  1. Melt 1 stick of butter on low heat in a small saucepan, allowing white milk solids to rise. Remove milk solids, add smashed garlic, and cook for about 15 minutes until infused.
  2. In a medium pot, add potato cubes and enough water to cover; season with salt. Boil until fork-tender (about 20 minutes).
  3. Drain potatoes thoroughly and let excess moisture evaporate.
  4. Pass hot potatoes through a ricer back into the pot.
  5. Mix in warm melted butter, cream, and salt with a handheld mixer until combined (about 2–3 minutes). Add sour cream and mix on low until smooth.
  6. Transfer to a serving dish, drizzle with remaining melted butter, garnish as desired.
