  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon chipotle pepper
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons extra virgin olive oil, divided
  • 1/2 cup sour cream (regular or dairy-free)
  • 1/4 cup mayo
  • 3 tablespoons fresh dill, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Instructions

  1. Prepare the dill sauce by mixing sour cream, mayo, fresh dill, minced garlic, lemon juice, salt, and pepper in a bowl. Chill until ready.
  2. Preheat your oven to 400°F (200°C) and pat salmon fillets dry.
  3. Mix blackening spices: paprika, onion powder, garlic powder, cayenne pepper, chipotle pepper, oregano, thyme, salt, and pepper. Coat each fillet generously.
  4. Drizzle olive oil over seasoned fillets and rub in gently.
  5. Heat a cast iron skillet over medium-high heat with olive oil. Sear salmon skin-side up for 1 to 3 minutes until charred; flip to skin-side down.
  6. Transfer skillet to the oven and bake for 10 to 14 minutes until salmon flakes easily.
