  • 1/2 cup barley tea
  • 1/2 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper
  • Sea salt and black pepper to taste
  • 2/3 cup pomegranate seeds for garnish

Instructions

  1. In a large skillet over medium-high heat, melt the butter. Add the carrot pieces and cook for about 7-8 minutes until browned on the edges.
  2. Turn off the heat and carefully add barley tea, letting fumes dissipate for a minute before returning to medium-low heat. Cook until most tea evaporates (approximately 3 minutes).
  3. Stir in brown sugar, cinnamon, and cayenne pepper. Cook until tender while stirring often. Increase heat in the last minute to thicken the glaze. Season with salt and pepper.
  4. Serve warm topped with pomegranate seeds.
