  • 12 ounces bittersweet chocolate chips (60-70% cacao)
  • 1/2 cup butter
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 cup pecans (chopped, optional)
  • 1/2 cup mini semisweet chocolate chips

Instructions

  1. Melt the bittersweet chocolate chips and butter in a heavy saucepan over low heat, stirring constantly until smooth.
  2. In a stand mixer with a paddle attachment, beat together the eggs, granulated sugar, brown sugar, vanilla, baking powder, and salt on high speed for about 5 minutes until thick and creamy.
  3. Lower the speed and mix in the melted chocolate until combined.
  4. Stir in the flour and cocoa powder just until no dry ingredients remain. If desired, fold in chopped pecans and mini chocolate chips.
  5. Cover the batter and chill it in the refrigerator for 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Using a cookie scoop, drop batter onto prepared sheets about 2 inches apart.
  8. Bake for 8–10 minutes until edges are set but centers look slightly wet. Let cool on the baking sheet before transferring to a wire rack.
