  • 1/4 cup sugar
  • 1/2 cup packed brown sugar
  • 3/4 tsp vanilla extract
  • 3 tbsp sour cream
  • 2 large eggs
  • 3/4 cup milk
  • 1 cup finely chopped apple
  • 1 1/4 cups unsalted butter, room temperature
  • 5 cups powdered sugar
  • 46 tbsp caramel sauce
  • Pinch of ground cinnamon
  • Additional caramel sauce, for drizzling
  • Apple slices, for decorating

Instructions

  1. Preheat your oven to 350°F (176°C) and line a cupcake pan with liners.
  2. In a bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter, sugars, and oil until fluffy. Add vanilla and sour cream; mix well.
  4. Incorporate eggs one at a time. Gradually add the dry mixture alternately with milk until just combined.
  5. Fold in chopped apples gently.
  6. Fill liners three-quarters full and bake for 15-18 minutes until a toothpick comes out clean.
  7. Cool completely before frosting with caramel buttercream made by mixing softened butter with powdered sugar and caramel sauce.
