  • 2 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 and 1/4 cups packed light or dark brown sugar
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/3 cup granulated sugar (for rolling)

Instructions

  1. In a large bowl, combine 2 cups flour, 1 teaspoon baking soda, 1 and 1/2 teaspoons cornstarch, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt.
  2. In another bowl, whisk together 3/4 cup melted butter and 1 and 1/4 cups brown sugar until smooth. Add in 1 egg and 2 teaspoons vanilla extract; mix until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until just combined. Chill the dough for at least 2 hours.
  4. Preheat your oven to 325°F (163°C) and line baking sheets with parchment paper.
  5. Roll about 2 tablespoons of dough into balls, coat with granulated sugar, and place on prepared sheets about three inches apart.
  6. Bake for 10–13 minutes until puffy but still soft in the center. Let cool for ten minutes before transferring to a rack.
