  • 1 cup butter, melted and cooled (226g)
  • 1 cup light brown sugar, tightly packed (200g)
  • ¾ cup sugar (150g)
  • 2 eggs + 1 egg yolk
  • 1 ½ teaspoon vanilla extract
  • 2 ½ cups all-purpose flour (285g)
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ¾ cup mini chocolate chips (125g)
  • 2 cups semisweet chocolate chips (340g)
  • ½ cup heavy cream (120ml)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two mini muffin tins with baking spray or grease.
  2. In a large bowl, mix melted butter with light brown sugar and regular sugar until combined.
  3. Add eggs and yolk one at a time, mixing well after each addition followed by the vanilla extract.
  4. In another bowl, whisk together flour, cornstarch, baking powder, and salt.
  5. Gradually combine dry ingredients with wet mixture until fully blended; fold in chocolate chips.
  6. Use a cookie scoop to fill muffin tin wells evenly.
  7. Bake for about 18 minutes or until edges are golden brown; cool for 5 minutes before pressing centers to create wells.
  8. Cool completely on a rack before filling with ganache.
