  • 50 grams sugar
  • ¼ teaspoon kosher salt
  • 113 grams unsalted butter (cold, cubed)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon whole milk
  • 283 grams semi-sweet chocolate (chopped)
  • 1½ cups heavy cream
  • 2 teaspoons sugar
  • 1 tablespoon orange zest (finely grated)
  • Flaky sea salt for garnish

Instructions

  1. Prepare the crust: In a bowl, whisk together flour, sugar, and salt. Add cold butter and mix until crumbly. Chill.
  2. Combine wet ingredients: Whisk egg yolk, vanilla, and milk; add to chilled flour mixture and combine into a disk. Chill again.
  3. Form tart shell: Roll out the dough and place it in a greased tart pan; chill.
  4. Bake crust: Preheat oven to 375°F (190°C). Line with parchment and bake until golden.
  5. Make ganache filling: Heat cream and sugar until simmering; pour over chocolate and stir in orange zest and butter until smooth.
  6. Assemble: Pour ganache into cooled crust and chill until set.
