  • 1 teaspoon baking soda
  • 1 teaspoon espresso powder
  • 3/4 cup milk (whole or 2%)
  • 1/2 cup dark chocolate chips
  • 2 cups powdered sugar
  • 4 tablespoons milk (whole or 2%)
  • 1/4 teaspoon peppermint extract
  • 1 tablespoon Greek yogurt
  • 3 tablespoons crushed candy canes

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, cream together the softened butter and sugars until fluffy.
  3. Add baking soda, baking powder, espresso powder, salt, and cocoa powder; mix until well combined.
  4. Beat in the eggs one at a time along with the peppermint extract until fully incorporated.
  5. Gradually alternate adding flour and milk until the batter is smooth.
  6. Fold in dark chocolate chips gently using a rubber spatula.
  7. Pour the batter into a greased loaf pan lined with parchment paper.
  8. Bake for about 50-60 minutes or until a toothpick inserted comes out clean.
  9. While cooling, prepare frosting by mixing powdered sugar, milk, peppermint extract, and Greek yogurt until smooth.
  10. Once cooled, frost the bread and top with crushed candy canes before serving.
