Ingredients

Scale
  • 4 thick-cut beef chops (about 8 ounces each)
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil
  • 3 tablespoons salted butter (divided)
  • 1 1/4 cups heavy cream

Instructions

  1. Season the beef: Combine garlic powder, onion powder, chili powder, paprika, oregano, salt, and optional cayenne in a small bowl. Generously season both sides of the beef chops with the spice mixture.
  2. Sear the beef: Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Cook the seasoned beef chops for about 3-4 minutes on each side until golden brown.
  3. Create the sauce: Remove the beef from the skillet and lower the heat. Pour in heavy cream, scraping up flavorful bits from the pan. Add remaining butter and simmer gently.
  4. Combine and finish: Return beef to the skillet, cover with a lid, and cook for an additional 10-15 minutes until internal temperature reaches 145°F.
