  • 2 cans (14 oz each) butter beans, drained and rinsed
  • 1/4 cup almonds
  • 3 tablespoons nutritional yeast
  • 2 garlic cloves
  • 1 cup fresh basil
  • 2 cups baby spinach
  • 1 tablespoon olive oil
  • 1/4 cup vegetable stock
  • 1 tablespoon lemon juice
  • 1/2 fennel bulb, sliced
  • 1 medium leek, sliced, white and light green parts only
  • 1/4 cup vegetable stock
  • 2 tablespoons pine nuts, toasted
  • 1/4 teaspoon red chili flakes
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a blender, combine drained butter beans, nutritional yeast, almonds, sliced garlic, vegetable stock, lemon juice, and packed basil; blend until smooth.
  2. Heat olive oil in a large pan over medium heat. Sauté sliced leek for 1 minute until fragrant then add sliced fennel; cook for another 3–4 minutes.
  3. Stir in the two cans of butter beans and pesto mixture until well combined.
  4. Pour in vegetable stock and add baby spinach; cover and simmer for 2–3 minutes until wilted.
  5. Finish by stirring in toasted pine nuts and red chili flakes; season with salt and pepper to taste.
  6. Serve hot with crusty bread or on toast.
