  • ½ pound beef or turkey sausage
  • 1 small red bell pepper
  • 3 cremini mushrooms
  • 1½ cups sharp cheddar cheese
  • 16 6-inch flour or corn tortillas

Instructions

  1. Preheat your oven to 400°F and prepare a foil-lined baking sheet with nonstick spray.
  2. In a nonstick skillet over medium heat, cook the sausage until browned, then drain on paper towels.
  3. Sauté the diced bell pepper for two minutes, add mushrooms, and cook for another minute.
  4. Lower heat and scramble whisked eggs with vegetables; season with salt and pepper, then mix in sausage and one cup of cheese.
  5. Warm tortillas in the microwave for about 20 seconds.
  6. Fill each tortilla with the egg mixture and remaining cheese; roll tightly and place seam-side down on the baking sheet.
  7. Bake for 8 minutes, flip gently using tongs, then return to bake for an additional 3 minutes until golden brown.
