  • 6 tbsp olive oil
  • 1 tsp Old Bay seasoning
  • ½ tsp chili pepper
  • Fresh ground pepper
  • 8 oz sharp white cheddar cheese (grated)
  • 4 oz parmesan cheese (grated)

Instructions

  1. Preheat your oven to 450°F (230°C). Cut cauliflower into florets, halving larger pieces.
  2. In a large mixing bowl, toss florets with olive oil until evenly coated.
  3. Sprinkle with Old Bay seasoning, chili pepper, and fresh ground pepper; mix well.
  4. Arrange florets in a single layer on a foil-lined baking sheet. Roast for about 15 minutes on the top rack.
  5. While roasting, grate cheddar and parmesan cheese. Set aside.
  6. Remove cauliflower from the oven, sprinkle cheese over it, and return it to the oven for an additional 7-10 minutes until golden brown and crispy.
  7. Serve warm using a spatula to transfer to a serving bowl.
