  • 120 g almond flour
  • 200 g powdered sugar
  • 100 g egg whites (room temperature)
  • 50 g granulated sugar
  • 1/4 tsp cream of tartar
  • 1 pinch salt
  • 150 g dark chocolate, chopped
  • 100 ml heavy cream
  • 1 tsp unsalted butter
  • 2 tbsp raspberry jam

Instructions

  1. Preheat your oven to 150°C (300°F) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar; set aside.
  3. In a bowl, whip egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar until stiff peaks appear.
  4. Gently fold the dry ingredients into the whipped egg whites. If using, add black gel food coloring.
  5. Pipe rounds onto prepared baking sheets and let rest for 30 minutes.
  6. Bake for about 20 minutes until crisp on the outside but soft inside. Cool completely.
  7. To make the filling, heat cream until simmering, pour over chopped chocolate, stir until smooth, then add butter.
  8. Once shells are cool, pipe raspberry jam on half and top with chocolate ganache; sandwich with another shell.
