  • ½ cup light brown sugar, gently packed
  • ¼ cup white granulated sugar
  • 1 medium egg, room temperature
  • 1 teaspoon vanilla extract (alcohol-free)
  • 245 grams all purpose flour (about 2 cups)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/3 cup sugar mixed with 2 tablespoons cinnamon
  • 4 ounces white chocolate, chopped
  • 2 tablespoons eggnog
  • 1/4 teaspoon freshly grated nutmeg

Instructions

  1. Preheat your oven to 350°F.
  2. In a stand mixer, cream together room temperature butter, light brown sugar, and granulated sugar until fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, sift together flour, baking soda, cream of tartar, and salt. Gradually incorporate into the wet mixture until you form a dough.
  5. Roll tablespoon-sized balls of dough in cinnamon-sugar mixture and place on parchment-lined baking sheets, pressing centers down gently.
  6. Bake for 7 minutes; if needed, press down centers again while warm.
  7. For the filling, melt white chocolate with eggnog. Stir until smooth and fill each cookie center.
  8. Allow cookies to set at room temperature before serving.
