  • 2 large yellow onions (thinly sliced)
  • ½ cup chicken broth
  • ¼ cup all-purpose flour
  • Vegetable oil for frying
  • ¼ cup (½ stick / 57 g) unsalted butter (melted)
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup (122.5 g) whole milk (room temperature)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a mixing bowl, combine thawed hash browns, melted butter, cheddar cheese, sour cream, diced onion, garlic, flour, salt, black pepper, cayenne pepper, dried mustard, chicken broth, and whole milk. Mix until smooth.
  3. Pour the mixture into the baking dish and spread evenly.
  4. For the onion topping, heat vegetable oil in a frying pan over medium heat. Fry sliced onions until golden brown and crispy; sprinkle with salt.
  5. Bake casserole for about 50 minutes or until bubbly. Add crispy onions during the last few minutes of baking. Let it cool before serving.
