  • 1 large egg
  • 1 large egg yolk (discard the egg white)
  • 2 teaspoons vanilla extract
  • 1/2 cup unsalted butter (softened) for frosting
  • 8 oz brick-style cream cheese (full-fat)
  • 23 cups powdered sugar
  • 12 tablespoons whipping cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, spices, and baking soda.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Mix in molasses, egg, egg yolk, and vanilla.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. While cooling, beat cream cheese and butter in a bowl; gradually add powdered sugar to achieve desired consistency.
  7. Frost cooled bars evenly, cut into squares, and enjoy!
