  • 1 cup granulated sugar
  • ¼ cup vegetable oil (or melted coconut oil)
  • 2 large eggs (room temp)
  • 1 tsp vanilla extract
  • Gel food coloring (orange, purple, or black)
  • ½ cup powdered sugar (for rolling)

Instructions

  1. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt.
  2. In another bowl, beat granulated sugar with vegetable oil until smooth. Add eggs one at a time, then stir in vanilla extract and food coloring.
  3. Combine dry and wet ingredients gently until just mixed; avoid overmixing.
  4. Chill the dough for at least 1 hour or freeze for 30 minutes.
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Roll dough into tablespoon-sized balls and coat in powdered sugar.
  7. Place on prepared sheets about two inches apart and bake for 10–12 minutes until cracked on top but soft in the center.
  8. Cool on the baking sheet for five minutes before transferring to wire racks.
