  • 4 tablespoons butter
  • 3 tablespoons honey
  • 1 tablespoon fresh thyme (plus more for garnish)
  • 1/4 teaspoon kosher salt (plus more to taste)

Instructions

  1. Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper.
  2. Trim the tops and bottoms of the carrots. Optionally peel them, then cut each carrot in half lengthwise. Lay them out on the baking sheets without overcrowding.
  3. In a small saucepan over low heat, melt the butter, then mix in honey and thyme until well combined.
  4. Pour half of the honey butter sauce over the carrots; season with salt and pepper. Arrange carrots flat side down for even browning.
  5. Roast in the preheated oven for 15-20 minutes until tender and golden brown. Drizzle with remaining sauce and return to oven for an additional 5 minutes.
  6. Serve warm, garnished with extra thyme if desired.
