  • 1 cup sharp cheddar cheese (finely shredded)
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon granulated sugar
  • 1 large egg (room temperature)
  • ½ cup whole milk
  • 1 tablespoon unsalted butter (melted)
  • 1 can sweet corn (drained)
  • 2 medium jalapeños (seeded and finely diced)
  • Vegetable oil (for frying)

Instructions

  1. In a medium bowl, mix the flour, cheese, baking powder, garlic powder, salt, and sugar.
  2. In another bowl, whisk together the egg, milk, and melted butter until combined.
  3. Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix.
  4. Gently fold in the corn and diced jalapeños.
  5. Heat vegetable oil in a heavy pot over medium heat until it reaches 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil in batches, frying for about 2-3 minutes until golden brown.
  7. Remove with a slotted spoon and drain on paper towels.
