- 1 cup sharp cheddar cheese (finely shredded)
- 1 teaspoon baking powder
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon granulated sugar
- 1 large egg (room temperature)
- ½ cup whole milk
- 1 tablespoon unsalted butter (melted)
- 1 can sweet corn (drained)
- 2 medium jalapeños (seeded and finely diced)
- Vegetable oil (for frying)
- In a medium bowl, mix the flour, cheese, baking powder, garlic powder, salt, and sugar.
- In another bowl, whisk together the egg, milk, and melted butter until combined.
- Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix.
- Gently fold in the corn and diced jalapeños.
- Heat vegetable oil in a heavy pot over medium heat until it reaches 350°F (175°C).
- Drop spoonfuls of batter into the hot oil in batches, frying for about 2-3 minutes until golden brown.
- Remove with a slotted spoon and drain on paper towels.
