  • 1 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1½ cups (300 g) granulated sugar
  • 3 small or medium lemons, zested
  • 1 cup (226 g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp (5 ml) vanilla extract
  • 1 cup (105 g) fresh blueberries
  • ¼ cup (50 g) granulated sugar for rolling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt the butter in a small bowl and let it cool slightly.
  3. In another bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  4. In a large mixing bowl, combine sugar and lemon zest until sandy. Add melted butter and mix well. Then incorporate the egg, egg yolk, and vanilla until smooth.
  5. Gradually stir in the dry ingredients until just combined. Gently fold in the blueberries.
  6. Use a medium cookie scoop to form dough balls and place them on the baking sheet with space between each ball.
  7. Bake for 10-12 minutes until edges are set and lightly golden.
  8. Cool on the sheet for 3-4 minutes before transferring to a rack.
