  • 4 salmon fillets
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss halved baby potatoes in a mixing bowl with olive oil, salt, and black pepper. Spread on one side of a baking sheet.
  3. Roast potatoes for about 20 minutes until golden brown and crispy.
  4. While roasting, toss broccoli florets with olive oil, salt, and pepper in another bowl. After the potatoes have roasted for 20 minutes, add the broccoli to the baking sheet.
  5. Season salmon fillets with salt and pepper. Place them on another prepared baking sheet or on top of the broccoli if space allows.
  6. Cook everything for an additional 15 minutes or until the salmon flakes easily.
  7. For the sauce, melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant. Stir in broth, bring to simmer; then mix in cream, lemon juice, lemon zest, and Dijon mustard until slightly thickened.
  8. Serve hot by plating crispy potatoes, roasted broccoli, and salmon fillets drizzled with lemon butter sauce.
