  • 2 teaspoons vanilla extract
  • 2 tablespoons sour cream
  • 1 large egg
  • 2 medium apples (peeled, cored & finely diced)
  • 2 tablespoons brown sugar
  • 1/2 cup all-purpose flour
  • 2 tablespoons cold unsalted butter (diced into 1/2-inch cubes)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Caramel sauce

Instructions

  1. Preheat oven to 325°F. Line muffin tin with cupcake liners.
  2. In a bowl, mix crushed graham crackers, melted butter, sugar, cinnamon, and nutmeg. Press mixture into muffin cups.
  3. In another bowl, beat cream cheese until smooth; add powdered sugar, vanilla, sour cream, and egg until combined.
  4. In a separate bowl, mix diced apples with brown sugar.
  5. Spoon cheesecake filling into crusts followed by apple mixture and sprinkle streusel on top.
  6. Bake for 23-25 minutes until set. Cool at room temperature before chilling in the fridge.
