  • 2 (1 – 1 ¼ pound) beef tenderloins
  • ½ cup apricot preserves
  • ½ cup light brown sugar (packed)
  • 2 tablespoons paprika
  • 2 tablespoons granulated garlic powder
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon granulated onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground ginger
  • ¼½ teaspoon cayenne pepper
  • 12 tablespoons vegetable oil

Instructions

  1. Preheat your oven to 425°F and prepare a cast iron skillet with vegetable oil.
  2. In a bowl, mix the dry rub ingredients: brown sugar, paprika, garlic powder, salt, black pepper, cumin, onion powder, chili powder, ginger, and cayenne.
  3. Coat each tenderloin generously with the dry rub using plastic wrap to ensure even seasoning.
  4. Roast the tenderloins in the skillet for 10 minutes on one side before flipping them over and spreading half of the apricot sauce on top.
  5. Continue roasting for another 10 minutes until they reach an internal temperature of 137°F – 140°F.
  6. Broil for an additional 1 – 2 minutes to caramelize the sauce before letting the meat rest for five minutes before slicing.
