  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. Whisk together flour, baking powder, and salt in a medium bowl.
  2. Cream butter and sugar until light and fluffy using an electric mixer. Beat in the egg, vanilla extract, and peppermint extract.
  3. Gradually mix dry ingredients into the wet mixture until combined.
  4. Divide the dough and color half with red gel food coloring.
  5. Chill both dough halves wrapped in plastic wrap for at least 30 minutes.
  6. Roll out each dough into rectangles; layer them and roll into a log.
  7. Chill the log for two hours before slicing into rounds.
  8. Bake at 375°F for 8-10 minutes until edges are lightly golden.
