  • 16 oz cream cheese (softened)
  • 1½ cups powdered sugar
  • 16 oz whipped topping (thawed)
  • 3.4 oz box instant vanilla pudding
  • 12 oz can evaporated milk
  • 15 oz can pure pumpkin
  • 1½ tsp pumpkin spice
  • ¼ cup chopped pecans (for topping)

Instructions

  1. 1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into a 9×13 inch baking dish.
  2. 2. For the cream cheese layer, beat softened cream cheese and powdered sugar until smooth; fold in whipped topping and spread over cooled crust.
  3. 3. Refrigerate the cream cheese layer while making the pumpkin layer by beating together instant vanilla pudding and evaporated milk until thickened. Add pure pumpkin and pumpkin spice, then fold in half of the whipped topping.
  4. 4. Spread the pumpkin mixture over the cream cheese layer, then top with remaining whipped topping and sprinkle with chopped pecans.
