  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry mix to the wet mixture until just combined.
  6. Fold in the chocolate chips, mini vegan marshmallows, and graham cracker pieces gently.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet spaced about 2 inches apart.
  8. Top each cookie with extra vegan marshmallows and chocolate chips if desired.
  9. Bake for 12 to 14 minutes until golden at edges but still soft in center.
  10. Let cool on the sheet briefly before transferring to a wire rack.
