  • 5 tablespoons unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 16 ounces cream cheese, softened to room temperature
  • 1/3 cup full fat sour cream, room temperature (or Greek yogurt)
  • 1/2 cup plus 1 tablespoon granulated sugar
  • 1 egg plus one egg yolk, room temperature
  • 1 teaspoon vanilla
  • 1 tablespoon all-purpose flour
  • 1/8 teaspoon salt
  • 3/4 cup pumpkin puree
  • 1/2 cup light brown sugar, packed
  • 1/2 cup heavy cream, room temperature
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon all-spice
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 350°F and line an 8 x 8 baking pan with parchment paper.
  2. In a food processor, crush gingersnap cookies and mix with melted butter and brown sugar. Press into the bottom of the prepared pan.
  3. Bake crust for 7 minutes; cool.
  4. Reduce oven temperature to 325°F.
  5. For the cheesecake layer, beat cream cheese and sour cream until smooth. Mix in sugar, eggs, vanilla, flour, and salt.
  6. For the pumpkin layer, combine pumpkin puree with brown sugar, heavy cream, egg, vanilla, flour, spices, and salt.
  7. Layer cheesecake over crust followed by pumpkin mixture; swirl together using an offset spatula.
  8. Bake for 50–55 minutes until set but slightly jiggly in the center.
  9. Cool completely before chilling overnight in the fridge.
