  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes. Cool.
  2. Beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time; mix in sour cream until creamy.
  3. In another bowl, mix pumpkin puree with spices.
  4. Pour half the cream cheese filling into the crust; dollop pumpkin mixture on top and swirl gently. Add remaining filling and more pumpkin mixture; swirl again.
  5. Bake for about 60 minutes until slightly jiggly in the center. Cool in the oven with the door ajar for an hour before refrigerating for at least five hours.
