  • 1/4 cup butter
  • 1 bag large vegan marshmallows (approximately 40)
  • 6 cups Rice Krispies
  • Red & yellow liquid food coloring
  • Mini Rolos (for decoration)
  • Green M&M's (for decoration)
  • 1/4 cup cooking oil or melted butter (to prevent sticking)

Instructions

  1. Melt the butter in a large pot over low heat. Stir until fully melted.
  2. Add the vegan marshmallows and stir continuously until completely melted and combined.
  3. Remove from heat and mix in yellow food coloring; then add red food coloring gradually until you achieve the desired pumpkin color.
  4. Fold in the Rice Krispies until all are evenly coated.
  5. Coat hands with cooking oil or melted butter and roll small portions into balls on parchment paper.
  6. Press a Mini Rolo into each ball for a stem and place a green M&M as a leaf.
  7. Allow to cool completely before serving.
