  • 8 ounces uncooked pasta (linguini, spaghetti, or tagliatelle)
  • 8 ounces salmon fillets (skin removed)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon unsalted butter
  • 3 cloves garlic (minced)
  • ¾ cup heavy cream
  • 2 teaspoons lemon juice
  • ½ cup grated parmesan cheese
  • Fresh parsley (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. Pat salmon dry and season with salt and pepper.
  3. In a skillet over medium heat, melt butter and sear the salmon on all sides until cooked through (145°F/62°C). Remove from skillet and keep warm.
  4. In the same skillet, sauté minced garlic for about 30 seconds. Deglaze with reserved pasta water, then stir in cream, lemon juice, and parmesan until smooth.
  5. Gently break the salmon into pieces and add it along with the cooked pasta to the skillet. Mix well and warm through.
  6. Serve garnished with parsley and lemon wedges.
