  • 16 ounces chicken sausage
  • 1/2 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 2 cups water
  • 1 red bell pepper (chopped)
  • 2 sticks celery (chopped)
  • 1.5 pounds sweet potatoes (peeled & diced)
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot, cook the chicken sausage over medium-high heat for about 5-6 minutes until browned, breaking it apart with a wooden spoon.
  2. Add chopped onion and minced garlic, cooking for another 5 minutes until aromatic.
  3. Stir in chicken broth, water, red bell pepper, celery, and sweet potatoes. Bring to a boil.
  4. Reduce heat to simmer gently, covering slightly with a lid for 15-20 minutes until sweet potatoes are tender.
  5. Season with salt and pepper to taste before serving hot.
