  • 2 acorn squash
  • ½ pound ground turkey
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Cut each acorn squash in half lengthwise and scoop out the seeds.
  3. Place cut side down on the baking sheet and bake for 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook the ground turkey until browned; set aside.
  5. In the same skillet, add olive oil and sauté onions until softened. Add kale, garlic, celery, apples, and herbs; cook for another few minutes.
  6. Mix in cooked turkey and adjust seasoning if needed.
  7. Scoop some flesh from the baked squash into the filling mixture.
  8. Fill each squash half with the mixture, then bake for an additional 15 minutes.
  9. Sprinkle with feta cheese and nuts; bake for another 5 minutes before serving hot.
