  • 1 tablespoon packed brown sugar
  • 2 teaspoons coarse red Hawaiian sea salt or kosher salt
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds beef shoulder
  • 1/4 cup canola oil
  • 1 onion, diced
  • 3 inches ginger, sliced
  • 4 cloves garlic, crushed
  • 1 cup pineapple juice
  • 2 cups chicken broth

Instructions

  1. Prepare the marinade by mixing brown sugar, sea salt, smoked paprika, cumin, coriander, and black pepper in a bowl.
  2. Rub the marinade onto the beef shoulder and marinate for at least 30 minutes (overnight for best results).
  3. Heat canola oil in a cast iron pot over medium-high heat and sear the marinated beef until browned on all sides (5-7 minutes). Remove from pot.
  4. In the same pot, sauté diced onion until translucent (3-4 minutes), then add ginger and garlic until fragrant (about 1 minute).
  5. Deglaze with pineapple juice and scrape up any browned bits.
  6. Add chicken broth and return the beef to the pot; bring to a simmer and cover.
  7. Reduce heat to low and braise for about 150 minutes or until fork-tender.
  8. Shred the beef using two forks and mix back into the sauce before serving.
