  • 4 beef chops (bone-in or boneless)
  • 1.5 lbs Yukon Gold or red potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tbsp unsalted butter (melted)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine diced potatoes with olive oil, garlic powder, paprika, rosemary, thyme, salt, and pepper. Toss until well-coated.
  3. Spread seasoned potatoes on one side of a baking sheet and place beef chops on the other side.
  4. Drizzle melted butter over the beef.
  5. Roast for about 25-30 minutes until beef reaches an internal temperature of at least 145°F (63°C) and potatoes are golden brown.
  6. Allow to rest for a few minutes before serving.
