  • 1 pound Yukon Gold potatoes (small ones halved and larger ones quartered)
  • 1/2 pound green beans (trimmed and cut in half)
  • 2 large top sirloin steaks (about 1.5 lbs total)
  • 1/4 cup salted butter (softened)
  • 2 tablespoons olive oil
  • Salt & pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking sheet.
  2. On the prepared baking sheet, toss potatoes and green beans with olive oil, salt, pepper, minced garlic, dried garlic powder, and Italian seasoning. Roast for 20 minutes.
  3. Switch oven setting to broil. Season steaks with salt and pepper, then place on the baking sheet with vegetables.
  4. Broil steaks for about 3-5 minutes per side until desired doneness is reached; medium-rare is around 130°F (54°C).
  5. Remove from oven, spread garlic butter over steaks, tent with foil, and let rest for 5 minutes.
  6. Slice steaks against the grain and serve with roasted vegetables drizzled with remaining garlic butter.
