  • 1 lb baby potatoes
  • 1 Tbsp olive oil
  • 3 cloves garlic (minced)
  • 2 tsp fresh thyme
  • Salt and pepper (to taste)
  • 1 lb asparagus (ends trimmed)
  • 2 tsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp lemon zest
  • 4 (6 oz) salmon fillets, fresh or frozen, thawed
  • 3 Tbsp whole grain Dijon mustard
  • 3 Tbsp maple syrup (or honey)
  • 2 cloves garlic (minced)
  • 1 Tbsp lemon juice
  • 1 tsp fresh thyme
  • 1/4 tsp paprika
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, toss baby potatoes with olive oil, garlic, thyme, salt, and pepper. Spread on a sheet pan and roast for 20-25 minutes.
  3. Meanwhile, prepare asparagus by tossing it with olive oil, garlic, lemon zest, salt, and pepper.
  4. In another bowl, mix Dijon mustard, maple syrup (or honey), minced garlic, lemon juice, thyme, paprika, salt, and pepper for the glaze.
  5. After potatoes are browned, push them to one side of the pan and add asparagus on the other side. Place salmon fillets in the center and brush generously with glaze.
  6. Bake for an additional 15 minutes or until salmon is cooked through.
