  • ½ pound turkey strips
  • 3 medium shallots
  • 16 ounces frozen peas
  • 1 pear
  • 1 teaspoon Dijon mustard
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ½ cup freshly chopped parsley
  • freshly ground black pepper to taste

Instructions

  1. Peel, slice, and dice the pear. Toss with lemon juice in a small bowl to prevent browning.
  2. Heat a large skillet over medium heat and cook turkey strips until golden brown. Remove with a slotted spoon and drain excess fat, leaving about 3 tablespoons in the pan.
  3. In the same skillet, sauté sliced shallots until softened, then stir in Dijon mustard.
  4. Add peas and diced pears to the skillet, stirring gently until warmed through.
  5. Off the heat, mix in half of the cooked turkey strips along with chopped parsley and black pepper to taste.
  6. Serve in a large bowl, topping with remaining turkey strips and lemon zest.
