- 2 cups all-purpose flour
- 1/2 tbsp instant dry yeast
- 3/4 cup full-fat coconut milk (warm)
- 3 tbsp olive oil (+ more for brushing)
- 1/2 tsp sea salt
- Fleur de Sel sea salt flakes (for garnish)
- In a mixing bowl, combine flour, yeast, and salt. Add warm coconut milk and olive oil.
- Knead on low speed with a dough hook for about 5 minutes until smooth and sticky.
- Cover and let the dough rise for 45 minutes to 1 hour until doubled in size.
- Turn out the dough onto a counter without kneading, cut into 12 pieces.
- Shape each piece into small rounds and place in a lightly oiled cast iron skillet.
- Cover and allow to rise again for 30 minutes.
- Preheat oven to 400°F while rolls rise.
- Bake for 15 minutes until golden brown.
- Brush with olive oil, sprinkle with Fleur de Sel, and cool slightly before serving.
