Ingredients

  • 2 cups all-purpose flour
  • 1/2 tbsp instant dry yeast
  • 3/4 cup full-fat coconut milk (warm)
  • 3 tbsp olive oil (+ more for brushing)
  • 1/2 tsp sea salt
  • Fleur de Sel sea salt flakes (for garnish)

Instructions

  1. In a mixing bowl, combine flour, yeast, and salt. Add warm coconut milk and olive oil.
  2. Knead on low speed with a dough hook for about 5 minutes until smooth and sticky.
  3. Cover and let the dough rise for 45 minutes to 1 hour until doubled in size.
  4. Turn out the dough onto a counter without kneading, cut into 12 pieces.
  5. Shape each piece into small rounds and place in a lightly oiled cast iron skillet.
  6. Cover and allow to rise again for 30 minutes.
  7. Preheat oven to 400°F while rolls rise.
  8. Bake for 15 minutes until golden brown.
  9. Brush with olive oil, sprinkle with Fleur de Sel, and cool slightly before serving.
