  • 2 tablespoons ghee
  • 2 large eggs, lightly beaten
  • 1 teaspoon Whole30-compliant vanilla powder (optional)
  • ½ teaspoon cinnamon
  • 1 ripe banana, mashed
  • ¼ cup ghee (for topping)
  • 1 cup chopped pecans
  • ¼ cup diced dates
  • 2 tablespoons coconut sugar

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the mashed sweet potatoes, ghee, beaten eggs, vanilla powder (if using), cinnamon, and mashed banana until well mixed.
  3. In another bowl, mix together the ghee, chopped pecans, cinnamon, diced dates, and coconut sugar for the topping.
